Jurelillos a la moruna ( Horse Mackerel or Scad )

This time of the year April you can find jurel (horse mackerel) at the fishmongers and at a very good price. Jurel is a blue fish high in fat. Even though it can be found in the UK, it is not largely eaten in there, but remain very popular here in the Mediterranean.
A healthy and cheap meal traditionally eaten here in Andalucia.

Ingredients for 4 people:
1 Kg of Jurel
4 garlic cloves
A bunch of fresh parsley
8 cumin seeds
A pinch of “curcuma” (Curcumin)
1 tomato
6 table spoons of olive oil
3 table spoons of red vinegar
˝ litre of water
salt

Method:
Ask the fishmonger to gut and clean the fish for you
Peel and cut into very small pieces the tomato and the garlic
Finely chop the parsley
Put the fish in an earthen ware dish and cover with all the above ingredients
Cook on the hob at medium fire for 20 minutes with the lid on. Check often to check that it doesn’t boil
Serve with steamed or boiled vegetables
