Leg of Lamb with honey and dried fruit

This is a very easy dish to prepare and cook, typical from the province of Córdoba. Ideal if you have guests and don't want to spend too much time in the kitchen but still serve a delicious meal.

Ingredients for 4 people:

1 leg of lamb
˝ cup Brandy
2/3 cup Oporto (Port)
˝ cup dripping or olive oil
˝ cup honey
150 grs dried black prunes (without stone)
150 grs dried apricots
salt, black pepper and fresh rosemary

Method:

Season de leg of lamb with salt, pepper, rosemary and the dripping (or olive oil). Put in the oven and cook at 200 degrees for 10 minutes. Add honey, brandy and port. Place around the leg of lamb the dried prunes and apricots. Lower de temperature to 160-180 degrees and leave for 1 hour.
Serve the lamb in a dish surrounded by the dried fruit and pour the cooking stock. Serve immediately.

Tip: The brandy, port and honey make this dish quite sweet and I would reduce the honey amount to it.
