Patas Pobres

Poor man's potatoes is a simple dish of slowly fried potatoes, red and green peppers and onions. It is Ideal as a starter and as a vegetarian dish.

Ingredients for 4 people

1kg of potatoes, thinly sliced
1 red pepper roughly chopped
1 green pepper also roughly chopped
1 onion again roughly chopped
1/2 litre of olive oil salt and pepper

Method

Heat the olive oil in a large deep frying pan. Add the potatoes and season with salt.
Fry on a high heat for 5-10 minutes, turning the potatoes over then lower the heat down. Cover with a lid and fry gently for a further 10 - 15 minutes. Now add the red and green pepper, onion and stir well. Cover the pan and fry for a further 10 - 15 minutes. Remove from the pan with a slatted spoon to drain the oil.
