al Ajillo - Prawns in Garlic
This is a very popular dish here in Spain. It serves two as a starter or tapa. I first tried this dish many years ago in a chiringuito in Málaga and have now cooked this dish many a time. Full of garlic flavour and very easy to prepare.
INGREDIENTS:
· 250grams prawns, 25 count to a pound
· 1-2 oz of brandy
· 2 large cloves of garlic, crushed
· 1/4 cup virgin olive oil
· 1/2 tsp paprika
· 2 tsp chopped fresh parsley
· 1/2 lemon
PREPARATION:
Peel the prawns leaving the tails attached. In a heavy frying pan or ceramic dish heat (medium) the olive oil. Now throw in the crushed garlic and fry for approximately 1 minute or until they are brown. Make sure you do not burn the garlic. Now turn up the heat to high and add the prawns, the juice from the lemon, brandy and paprika. Fry and stir for about 3 minutes. Once cooked transfer the contents to a plate or dish and sprinkle with chopped parsley and season with salt & pepper. Very, very tasty indeed and simple and quick to prepare.
