Andalucian Recipes Traditional Food From Andalucia Spain

 

A traditional Andalucian festive Spanish dinner. Menu. – Serves 8 people.
Almond soup, Baked Dorada and mixed salad, Roast turkey with red cabbage in wine and potatoes, Turrón and ice cream
Marzipan Sweets, Cheeses and fruits, Coffees and Brandies

Migas is a simple country meal. Extremely popular in Spain, this dish is especially satisfying ( & inexpensive) to eat on a cold winters day. Ingredients for 4 people.

Stuffed Courgettes from Malaga. Easy main course to prepare typical from the province of Málaga. Ingredients for 4 people.

Andalucian Easter Menu. Garbanzos Soup, Cod Omelette and Fried custard servicng4-6 people.

Jurelillos a la moruna (Horse Mackerel or Scad)
This time of the year you can find jurel (horse mackerel) at the fishmongers and at a very good price. Jurel is a blue fish high in fat. Even though it can be found in the UK, it is not largely eaten in there, but remain very popular here in the Mediterranean.
A healthy and cheap meal traditionally eaten here in Andalucia.

Patatas Pobres. Poor man´s potatoes is a simple dish of slowly fried potatoes, red and green peppers and onions. It is Ideal as a starter and as a vegetarian dish.

Two different variations of Gazpacho from Andalucia.
Two similar recipes from Andalucia ideal for hot summer days when you fancy something light and cool. They are quite similar but, some of the ingredients varied slightly and the name is totally different.
The first recipe is Salmorejo and it is typical from the province of Córdoba. The second recipe is Porra Antequerana and this one is traditional from Antequera in the province of Málaga.

Garlic Rabbit Cordoba style.
As the name indicates, this dish is typical from the province of Córdoba. It is quite easy to prepare but it requires some preparation in advance as the recipe requires marinating.

Stuffed squid Málaga style. A light fish dish typical from the province of Málaga. The difficulty is medium and you will be able to experiment with different ingredients for the stuffing. If you are not too keen on having to clean the squid, another possibility is to get Choco or Sepia as it is already clean and you only need to put the stuffing inside.
Ingredients for 4 people.

Almejas a la malagueña.Clams Málaga style.
Cook this dish as a starter or as a tapa. You can also use chirlas (small clams) or Japanese clams to make this dish.
Ingredients for 4 people.

Leg of Lamb with honey and dried fruit.
This is a very easy dish to prepare and cook, typical from the province of Córdoba. Ideal if you have guests and don´t want to spend too much time in the kitchen but still serve a delicious meal.

Guiso de garbanzos con albóndigas de bacalao (Chick peas stew with cod balls)As this month is Easter we will keep with the tradition of the festivities and bring you a typical Spanish Easter recipe with fish. Ingredients for 4 servings.

Gambas al Ajillo - Prawns in Garlic This is a very popular dish here in Spain. It serves two as a starter or tapa. I first tried this dish many years ago in a chiringuito in Málaga and have now cooked this dish many a time. Full of garlic flavour and very easy to prepare.

Pinchos Morunos - Pork Kebabs. A quick and easy tapa, best marinated overnight. Can be made using pork, lamb, beef or chicken. We used pork. This is a popular tapa often served in bars across Spain.
