Stuffed Courgettes, Malaga
Andalucia.
Easy main course to prepare typical from the province of Málaga.
Ingredients for 4 people:
1 Kg Courgettes
300 gr Mince pork
100 gr Bacon or “tocino” in cubes
100 gr Jamón serrano cu tinto small pieces
1 Egg
1 Onion
300 gr Tomatoes
3 Garlic cloves
1 Glass of water
1 Glass of white wine
Flour, salt, bread crumbs, parsley, bay leaf
Method:
Cut the end of the courgettes and peel.
Empty the courgettes and keep the flesh.
Prepare the stuffing with the reserved courgette flesh, minced meat, ham, bacon, garlic, finely chopped parsley, bread crumbs and salt. Mix all the ingredients with a beaten egg.
Use the mixture to stuff the courgettes and once ready roll them in flour and fry in olive oil until golden.
Place the courgettes in an oven dish with the chopped onion, tomatoes, bay leaf, oil, water, white wine and leave to cook on a medium heat until tender, about 45 minutes.
You can serve this dish hot or cold accompanied by the cooking sauce.
Tip: Use already chopped and cooked tomato that you can buy ready in tins.
You can also use this recipe to stuff red peppers and also tomatoes. |
