Stuffed Squid Málaga style

A light fish dish typical from the province of Malaga. The difficulty is medium and you will be able to experiment with different ingredients for the stuffing. If you are not too keen on having to clean the squid, another possibility is to get Choco or Sepia as it is already clean and you only need to put the stuffing inside.

Ingredients for 4 people:

1.5 kg squid (calamares)
1 onion
1 boiled egg
50 grs of raw almonds
100-200 grs of Serrano ham
white wine
olive oil
2 bay leaves
salt

Method:

Clean the squids (remove all the insides and keep the legs).
Chop the legs and fry them.
Chop the onion finely and fry.
Put together in a bowl, the fried legs and onions, raw almonds, ham and boiled egg. Mix well and stuff the squid with the mixture using a toothpick to keep the squids close.
Fry the squids in olive oil adding some more onion, white wine and a couple of bay leaves.
Cook on slow heat for about 15-20 minutes.

Tip: For a finer mixture for the stuffing use a blender. A good ingredient to add to this recipe is prawns.
